Tonight’s menu was planned with black trumpet wild mushrooms in mind. They were foraged in the woods in Mendocino on extremely tough terrain. Steep, steep hills 12 miles from a road. These mushrooms are black, so they are extra hard to spot on the forest floor. I mixed them with an aglio olio peperoncino pasta. Tonight, I also cooked wild Dungeness crab and a little gem salad. This is certainly a meal that is all about “terroir” or taste of place. Black trumpets are of the earth and the Dungeness are of our waters. the lettuce was grown by a local farmer. Topping it off was the tarte tatin …an apple upside-down pie, with crème fraiche.
